Indian Pizza.
Uttapam is a very thick cousin of dosa since it can be thought of as a thick pancake where the toppings are cooked with the batter. This South Indian food perhaps deserves to be called as the Indian pizza owing to the several toppings that are sprinkled upon it.
Typically vendors spread the topping over the uthapam batter and press it down with their wet fingers while a few others tend to do the same using a spatula.There is a wide variety of Uttapam available in our country – be it Ragi Uttapam, capsicum Uttapam, tomato Uttapam, Rava Uttapam, Kara Uttapam(Kara means spicy in Tamil), wheat Uttapam, cheese Uttapam,panner uttapam and several others among which onion Uttapam(a personal favorite) and tomato Uttapam are the crowd favorite.
Uttapam is soft in texture unlike the crispness of dosa. They are best when served hot with sambar and chutney of your heart’s desire (I prefer mint chutney!).
